the machines by and large sit in several thousand warehouses, powered off, and not connected to the internet for a good deal of the time. You really need physical access to the machines or to whatever is programming them with the ballot information to do anything to them.

I still think what we used when I lived in Howard County, MD, was the best - a paper ballot that you connected the head and tail of an arrow to vote for the candidate/initiative and a machine scanned and then stored the paper ballot as a backup.
